In the early 1950s, just steps from where we stand today, Douglas Aircraft designed and built one of the most radical airplanes of its time: the X-3 Stiletto. Long, slender and impossibly sharp, it was an experimental aircraft made in Santa Monica in pursuit of speed, precision and a new way forward. Our name is a nod to that history — and to the spirit of making something unexpected in a place built for experimentation.
Stiletto brings that avant-garde spirit back to 3200 Airport Avenue. The menu is centered on flame-grilled meats, seafood and vegetables, with a cooking style that is elemental but a point of view that is lighter, more expressive and a little less traditional. Fire and finesse. A restaurant shaped by the history of the hangar it calls home, but made for Santa Monica today.
